The science of tea

Did you know that …

Tea works because the very hot water from your kettle causes the tea in your tea bag to release flavorful oils and soluble compounds? It’s true!

People have been drinking tea for hundreds of thousands of years, but it wasn’t until relatively recently that we began to understand the mechanism by which it works. In a very “Archimedes in the tub” moment, the French physicist Pierre Curie was giving his cat a bath when he had his famous revelation on tea. Upon pouring the boiling water over Lil’ Pierre (his cat), the animal dissolved almost completely, leaving only a few tufts of fur and a distinctly darker tub of water. While tea doesn’t dissolve to nearly the same extent as a cat, the cat-flavored bathwater set Big Pierre (his name for himself) to thinking …

And the rest is history!
